Accompaniments
Many of the foods and sweets of Naoussa are closely related to grapevine products. "Honey" from grape must made from xinomavro grape juice is the basis for many sweet delicacies, grape must pies, sutzuk lukum and more, and most of all "kores with honey". 'Garglianos', a type of baklava with homemade rolled pie sheets, sesame oil and plenty of walnuts also had 'honey from must' syrup. Local gastronomy is ideally complemented by fruit preserves which are made every year by the homemaker such as 'karidato' (walnut), quince paste or grated quince preserve, fig, pumpkin, baby eggplant, baby tomato and plum preserves.
